Safflower is the source of a natural dye dubbed CI Natural Red 26, although the colors olive, mustard, khaki, yellow and even purple and bright red with an alkaline mordant. The term “red tape” that means delay due to bureaucratic rules and procedures, comes from the fact that safflower dye was once used to produce a red binding once commonly used to seal important documents. It can also be used as a substitute for saffron in recipes, though the taste is much more subdued. Safflower powder is used to flavor the popular soda, Sunkist.
Powdered safflower is applied topically as a paste or it may be infused in oil to make salves and balms. The powder can also be encapsulated as a dietary supplement. The anti-inflammatory and antioxidant qualities of the herb are due to a variety of flavonoid glycosides, including kaempferol, quercetin and at least seven serotonin derivatives. Safflower is also rich in calcium, magnesium, folate, phosphorous and fatty acids.
